The Steam Injector is designed to work alongside the Rope Seal Door once the Dome is hot. The accessory includes a small beaker for measuring the correct amount of water and a funnel to be mounted into the steam vent on the exterior of the Dome. The funnel includes a narrow dripper and a cork bung to create an air seal.
These control the speed that the water falls into the steam tray within the oven, allowing temperatures not to be dramatically affected and steam levels maximised.
If you feel your steam injector is emptying into your oven too quickly, we would first suggest that you check that the cork bung is firmly fitted into place.
It takes about 1-2 minutes to fully evacuate the water from the steam injector. You should wait 3 minutes before removing the cork bung and adding more water into the steam injector.
