What does it do/cook?
The Dome can be used for the broadest range of cooking styles and excels at all of them.
Neapolitan pizza
Using commercial grade materials, The Dome is built to the exact ratios of a restaurant pizza oven. It means you can become a Neapolitan Pro in no time at all.
To take your pizzas to the next level, add the Neapolitan Archway accessory, designed to retain more heat in the oven for even faster cooking. Perfect for high hydration doughs and mastering the leopard spotting on your crusts.
Live fire
Achieve unparalleled results with the powerful rolling wood-fired flame, cooking at temperatures up to 500°C with an open door. Perfect for seared steak, crispy fish or charred vegetables.
Simply open the air vent to allow full airflow to your fire, continue to add wood and enjoy incredible flavour from simple ingredients, only possible with a wood-fired oven.
Roast
Live fire, an open door with a less intense flame can achieve totally different results. Fire up the oven to maximum temperatures and then allow it to drop below 290°C, with the air vent at 50% and adding wood less frequently.
This creates a slower roasting environment while retaining a unique dry heat. Ideal for cooking larger cuts of meat or fish. Charred on the outside and moist inside. Or baking different types of bread such as focaccia with fire kissed results every time.
Slow roast / smoke
From slow roast pork butt with hickory smoke, to a shoulder of lamb with roasted vegetables. The possibilities are endless.
The Dome’s thick stone, dense insulation and rope sealed door combine to create the perfect cooking environment for slow roasting over long periods. While the air vent allows you to control the internal temperature of the oven when cooking with wood or coal.
And if you’re in the mood for something a little different, add in apple, maple or whisky oak smoking chips to the fire for extra flavour.
Bake and steam
Close the rope sealed door to turn your Dome into a bread baking oven. Using a bed of embers or adding a piece of charcoal if you choose, the Dome’s unrivalled heat retention creates the ideal environment for baking bread, with enough floor space for multiple loaves.
Make your sourdough loaf even lighter and crunchier, using the Dome’s Steam Injector accessory. Our steam injector creates a moist environment in the oven, preventing the bread forming an outer crust before having the chance to fully rise. The result? A light and airy loaf that’s risen for longer and formed a crispier crust.
What type of fuel is needed?
Dome is available as dual fuel including a gas burner. This is currently for use with bottled propane. To use the wood burning side of the oven, we recommend using a hard wood, kiln dried kindling.
How long will my Dome hold its heat?
Once up to optimal temperature, the oven will remain hot for hours without additional fuel. Our testing has shown that the oven will take around 4.5-5 hours to drop from 400c to 100c (with the door on and all vents open). This means that joints of meat can be seared in the higher starting temperatures and then cooked low and slow in the residual heat without the necessity for any added fuel source. If longer cook times are required then a stable low temperature can be maintained using wood embers and / or charcoal and regulated via the airflow regulation vent.
Where can it be used?
Dome is for outdoor use only.
Set up/ Getting Started
Moving and Unboxing/Assembly
Dome comes fully assembled. We would recommend having at least one other person available to help you during the unboxing process due to the size and weight of the product. The handy lifting straps provided and lifting recesses in the oven will aid this. For the full unboxing video of Dome, see the link below.
https://www.gozney.com/pages/dome-instructions
Once all contents have been unboxed, you will simply need to place your Dome on top of your chosen surface, place the flue and flue cap into position and connect the thermometer control (see manual for details).
First Firing Gas/Wood
When firing up your Dome for the first time or if it hasn’t been used for a while, we recommend a 30 minute curing fire first. This prevents any thermal shock in the oven, especially during the colder months! To do this we recommend building up a very small fire initially is using on wood or using the lower flame setting on the gas burner. Keep this as a small fire for around 30 minutes before building the fire up or operating at full flame.
Full videos showing the curing process on both wood or gas can be found here - https://www.gozney.com/pages/dome-instructions
Surfaces/Where can it go
Whilst Dome is incredibly well insulated, due to the high heats it reaches, it can sometimes still feel hot to touch. Because of this and the open flame nature of the product, we recommend using this on a non-combustible surface. The Dome stand (insert link) is available as an individual purchase which is perfectly designed to house Dome, with shelves to store your wood and wheels to allow the flexibility of moving this around your garden.
Clearances
Due to the open flame nature of the product, we advise a distance from all combustible materials of - 1000m/3.5 ft (front / oven mouth), 50mm/2 inches (sides and rear), 350mm/1.25ft (top / roof). Always adhere to the greater distance in the event of uncertainty.
Regulators
For use with Gas, Dome is provided with a Regulator to fit a standard propane gas tank. For the UK this is a 37mbar push fit regulator for use with patio Gas. In the US and Australia, the regulator is a screw fit propane regulator. We recommend using a medium gas tank that is 10-15kg/ 20-30lb.\
How will my Dome be delivered?
Due to the size of Dome, this is sent on a pallet. This comes as a kerbside delivery, meaning it will be delivered to the nearest hardstanding ground on your property. Please note if your driveway is gravel, the Dome will be left on the hardstanding ground before this as the drivers pallet truck will not be able to manoeuvre on a gravel surface.
Care+Maintenance
What is the Warranty for Dome?
Dome comes with a one year warranty as standard. This can be extended to a 5 year limited warranty if used residentially and registered within the first 60 days after purchase. See more details here - https://www.gozney.com/pages/warranty
The warranty on Dome remains as one year for commercial use.
How should I store my Dome?
Dome is an outdoors product however we do recommend covering this in-between uses to protect it from the elements. You can purchase a cover for Dome separately on our accessories page. During particularly cold periods, we advise bringing Dome into a protected area where possible to avoid any thermal shock to the oven (a garage or shed is ideal!).
Should I clean my Dome?
Being an open flame product, Dome can get a little sooty and dirty. This is completely normal and to be expected. Whilst you don’t have to clean your Dome, if you would like to, we have a few tips on the best way to do this in a handy video linked here -
https://www.gozney.com/pages/dome-instructions
Troubleshooting
My thermostat gauge is showing an E1 error code. How can I fix this?
It sounds like the connection to the thermometer temperature display needs adjusting. Try removing thermometer temp display from the oven port, check the jack connection is pushed in securely. Turn the display off and on again. This should then show the accurate temperature. If this doesn’t solve the problem or for further thermometer troubleshooting, please reach out to the team at kontakt@gozney.com
My gas burner won’t light, help!
The gas burner ignition is powered by a battery. At the back of the Dome, there is an access panel. Open this up and there will be a battery holder. Check the battery is fitted the correct way round and that this is closed fully. If this doesn’t solve the problem or for further ignition troubleshooting, please reach out to the team at kontakt@gozney.com
My Dome stone has cracked, what should I do?
Some hairline cracking is a normal expectation of the product through the expansion and contraction of the oven floor during heat cycles. This will not affect the performance of the oven and is a characteristic of stone hearth wood fired ovens. If you are concerned you have a crack in your stone that is larger than a standard hairline, please send over some photos of this when the oven is cool and hot, along with the serial number for your Dome to kontakt@gozney.com
There is lots of soot building up on the front of my oven, is this ok?
Due to the open flame nature of the product, some soot will be produced. When burning with wood, this should reduce as the oven reaches optimum combustion levels. The gas flame is designed to recreate a wood style flame. With this in mind, the flame is an orange/yellow colour and there is an incomplete combustion present which will produce some soot. This is a normal expectation of the oven and why we recommend this for outdoor use only.
Accessories
Alongside the Dome itself, we have lots of new accessories coming that will help you to get the most from your product.
Dome Stand
The Dome Stand is simple to assemble, built to last and easy to manoeuvre. Making it easy to add your Dome to any backyard setup.
Dome Door
Turn your Dome into a bread oven or slow roaster with our Rope Sealed Door.
Built from ceramic coated 201 steel and double walled for extra heat retention, the Dome’s rope sealed door makes it easy to control the temperature, amount of smoke or steam in the oven with it’s easy-slide adjustable vent.
Combined with The Dome’s thick stone and dense insulation, the rope sealed door creates the perfect cooking environment for baking, smoking or slow roasting over long periods.
Dome Wood Loader
Fire up your Dome with ease using the Gozney Wood Loader. Specifically designed to make placing and handling wood in your oven simple and hassle free.
The stainless steel cup is the perfect size for Gozney Wood, allowing you to easily load wood anywhere in the oven. Rotate the plastic handle to break up wood with extra accuracy while cooking, and avoid getting ash on your food.
Dome Cover
Protect your Dome from the elements in between uses.
Dome Wood Rack
Elevate your wood fire up above the Dome oven floor. This wood rack allows air from the ashtray vent to explore every angle of your fire and produces an even flame across the oven to improve performance when cooking with wood. Minimises debris from the wood fire to make your food infused with wood-fired flavour but easy and mess-free at the same time.
Peels
Gozney Placement Peel
The Gozney Placement Peel is a professional grade, lightweight peel for the placement of dough and cooking trays in and out of your pizza oven. Tapered on one edge for easy access beneath baked goods or pans, the Gozney Placement Peel includes perforations to allow excess flour to fall away when making fresh pizza. These perforations also help steam escape from cooked baked goods, resulting in a crispier base. The non-stick surface is perfect for smooth transition between the peel's surface and the hot stone floor.
Gozney Turning Peel
The Gozney Turning Peel is perfect for repositioning food in everything from small domestic, right up to entry level commercial size ovens.
After using the Gozney Pizza Peel to place fresh pizza inside your oven, the Gozney Turning Peel makes sliding and turning pizza easy to do whilst cooking, reducing the risk of burn or damage from high temperatures.
